1. Research

We take time to thoroughly understand your brief and your brand. Researching heritage, events, associated places, archives, different perspectives. Looking for clues, connections, patterns and motifs.

2. Develop

We source ingredients that are natural, fresh and in season. Everything is made from scratch, even our baking powder. We roast, infuse, extract, pickle, caramelise: scientific method and culinary expertise are the secret to amplifying and preserving unique flavours.

3. Define

Recipes then evolve, through experimentation and refinement. As much thought is given to the aesthetic of the project as its taste. It all leads to the tasting session. Where you will meet the flavours of your brand for the first time.

The National Trust

Bespoke food and flavour

The story of Fenton House in Hampstead and its owner, silk merchant and Quaker Joshua Gee. Told through Georgian sweetmeats.

Camomile, lemon, ginger, muscovado sugar, apple. Ingredients to echo Gee’s interests, travels and investments. Apples from his ancient orchard. Sugar linking to his Caribbean colonial connections. Fiery ginger and calming camomile for Georgian preoccupations with digestion and relaxation.

 

Postcard Teas 

Pre-set taste experience

The Wonders of the World explored through geography, colour, texture and flavour. An afternoon tea unlike any other, devised in collaboration with Postcard Teas of Mayfair.

Our sequence of flavours were served with matching teas. Creations included Blueberry Matcha Odyssey: east meets west in juicy summer blueberries matched with a lime melissa cream and matcha crumble choux. And Pistachio Jewel in the Crown: a crispy millefeuille pistachio and honey melee with a spicy, sticky cinnamon and cardamom finish transporting you to the souks of Marakesh.

 

Liberty of London

Bespoke, multi-sensory taste experience

Celebrating the creative talent of young people from underprivileged backgrounds at The Emporium of Creativity event, arranged by Liberty London and the LDNY Foundation. 

A menu of sumptuous cakes, complementing cocktails devised by Cointreau. They included Cointreau Creative Conquest: a lush quest for creativity with toasted almonds enveloped in an infusion of Cointreau chocolate ganache with nougatine and sable biscuit. And Orange Berry Cardinal Delight: a colourful and curious explosion of flavour with a burst of autumnal blackberries and silky cloud of orange creme.
